Who doesn’t like a good bagel? No one that’s what I thought, but a delicious gourmet bagel can be expensive… So let’s make some!

Say hello to Droid’s Bagels!

Let’s start with the most important part, the ingredients:

Bagels:

  • Yeast Mixture
  • 2 teaspoons of active dry yeast
  • ¼ cup of lukewarm water
  • 1 teaspoon of sugar
  • Malt Mixture
  • 2 tablespoons of non-diastatic malt syrup
  • 1 cup of lukewarm water
  • Dough Mixture
  • 1 cup of white flour
  • 4 cups of whole wheat flour
  • 2 ¼ teaspoons of salt
  • 1 ¼ cup of warm water
  • Malt Water
  • 1 gallon of boiling water
  • ⅓ cup of non-diastatic malt syrup
  • Egg Wash Topping
  • 1 egg
  • 2 tablespoons of water
  • Sesame seeds (Optional)
  • Poppy seeds (Optional)
  • 1 tablespoon of Sauteed minced onion and 1 tablespoon of garlic (Optional)
  • Caraway seeds (Optional)
Yeast Mixture

First step is to activate the yeast to do this you mix the yeast with the ¼ cup of lukewarm water and teaspoon of sugar and let it rest for about 5 minutes. (Do this in your mixing bowl)

Malt Mixture

While the yeast is activating mix the 2 tablespoons of malt syrup with the 1 cup of lukewarm water until they are evenly mixed.

Dough

Next pour the Malt mixture into the mixing bowl with the salt, cup of white flour, and one cup of the wheat flour (we will pour the rest in throughout the mixing process).

Mix the dough on the lowest setting periodically adding in more flour and water until it all sticks together into a ball and cleans the sides of the bowl

Then push the dough off of the dough hook and flatten it down onto the bottom of the bowl and cover it and let it rise in a warm environment.

When it is done rising it should look like this

Place the dough on the cutting board and then split it into three pieces and roll them into three balls and let them rest for ten minutes.

After they have rested flatten the balls out and cut them into four quarters as so.

Then kneed and each quarter into a smooth ball and let it rest for 5 minutes.

Once the dough is done resting poke your thumb through the middle of the ball and twirl the bagel around your thumb until the hole is about 1 ½ inches in diameter. When they are done they should look like this:

Once you are done preheat the oven to 350° F.

Malt Water

While the dough is resting mix the ⅓ cup of malt syrup with the gallon of water and bring it to a rolling boil.

Egg Wash Topping

While you wait for the water to boil you can prep the egg wash topping, to do this you first need to beat the egg and mix it with the water. If you want to have the onion and garlic topping then saute the garlic and onion in a small pan.

Boiling the bagels

Place three bagels at a time in the water and let them boil for about a minute (flip them over after the first 30 seconds)

Baking the Bagels

Once the bagels are boiled place them on a cookie sheet that has been sprayed with cooking spray. Then brush the bagels with the egg wash, then sprinkle your topping of choice onto the wash.

Then bake the bagels for 15 minutes and then rotate the pans and bake them for another 15 minutes.

Once they are done baking take them out of the oven and let them sit for 5 minutes

Then take them off of the baking sheet and place them on a cooling rack to cool.

Once they are cool serve them as you choose and enjoy!
